I would consider myself a decent cook, and I am not afraid to try things and take risks. However most of my cooking is through recipes. I have started to try and move away to more improvisation, with things such as pasta sauces. However, is there any hints or maybe a book or two on how to become a better cook so to not have to rely on recipes? I would love to get to the point that I can whip something up by looking in the pantry and improvising. I am not afraid of failing, I just need some help because, since I am a college student and don’t have tons of money, I can’t just throw out dinner and grab a pizza every night if something goes wrong.

When I was at university I experimented with the Moosewood Cookbook.  It is a classic vegetarian cookbook; often it’s less expensive to experiment with legumes and vegetables than meats and seafood.  I learnt to make pakora vegetables and great banana bread from it.  But back then, though I loved to cook and entertain, I wasn’t into eating healthily as much as going to the pub and getting take away fish & chip’s every Friday night.  

I suggest Julia Child’s The Way To Cookas it has great pictures that makes it easy to follow along.  Also I really love using Mark Bittman’s How to Cook Everything now.
