Winter Squash Soup

I used a turban squash (a type of winter squash or pumpkin) that was sitting on my counter for the past week or so.  It was in my last CSA bin of the season (too short). 

Winter Squash Soup
1 turban squash (or similar pumpkin/squash)
3 cups water
1 tsp chicken broth base (or use 1 less cup water & 1 cup veg stock)
3/4 tsp cumin
1/4 tsp cinnamon
1/4 cup heavy cream
salt and pepper

Peel, seed & cut squash into 1-2 in cubes. Boil in water until soft. (About 15-20 minutes) Puree with potato masher or use immersion blender.  Add spices and cream. Add salt and pepper to taste.  Stir and reheat for a few minutes. Serve.
