Great use for left over chicken
Made mushroom leek ravioli last night. Since I had guests coming and not sure if they’d eat mushrooms I also made chicken ravioli. I just picked off the left over chicken from drumsticks we’d cooked 2 nights before. They had been coated with Penzy’s ‘Mural of Flavor’ so I just added chicken with some salt, pepper and ricotta cheese to food processor and ground. For...

Most kids will eat (HOMEMADE) chicken nuggets →
I’m reposting this. It’s a popular recipe that I’ve given away. If you look on most “kids menus” you will find chicken nuggets because it seems that most kids will eat them.
I believe in serving my children good food with occasional treats. The meals don’t need to be gourmet but they do need to be healthful.
This is a great alternative to frozen or fast...

Vietnamese Chicken & Sweet Potato Curry
At the end of the last school year, my son’s wonderful third grade teacher gave me a gorgeous and interesting cook book alice’s Cook Book by Alice Hart. It has very creative recipes with pairings that I wouldn’t think of; which for me makes it even better!
Last night I perused it to find something to make with the chicken breasts that I had to use. Not surprisingly I found a...

Perfect Quick Snack - Popcorn
I love popcorn. My kids love popcorn. Whether it’s at the movie theater or at home, it’s just a yummy treat. But I hate microwave popcorn. To me it tastes odd and I hate the way it makes the microwave smell (even worse if it burns). Several years ago I stopped buying it because I’d also read how the linings of the bags were bad and the spray butter endangered the people who...

Empanadas-- or as my sons call them "those tacos...
At this month’s Cooking Club we had a Latin American theme. I usually try to make something I’ve never tried making before or something I think is creative or challenging. So, I made arepas (sort of like corn flour rolls) but in case they didn’t work out, I had bought some frozen empanada dough discs (made with yucca and annatto). It wouldn’t have mattered - I ran out of time- so if they...

Girlfriends-- a source of inspiration
I am blessed in my friendships— I have such wonderful friends around the globe. I’ve been helped out of many a mess; shared in fun times; been proud of their accomplishments (I truly have some super-women friends); and inspired by so many of them. One area (not surprisingly) in which I have been inspired, is in my cooking and baking. I love cooking with friends too — my house or...

German Apple Pancake/Dutch Baby
A friend posted a photo of a Dutch Baby on her Facebook page. I thought… that looks so good; I must make one! So I did! But hers was without apples, I decided to make mine with apples.
It made reminded of growing up with a friend’s father making Hungarian Apple Pancakes (Palacsintas), which are more like crepes than this style of baked pancake. These were described in some...

Everything's better with bacon!
This idea is so simple. Take some favorites and combine them into an awesome meal. I can practically guarantee that your kids will eat it. I suggested dinner’s ingredients to my husband because I knew we would all like it. Of course, I don’t have to tell him how to make it, but I also know it will be great— and different than the way I’d make it. (Actually when we...

Crunchy Chicken Nuggets
Since the day before I’d made homemade pot stickers which my youngest refused to eat. He ended up going to bed without eating a proper dinner. I felt guilty so on this night I made a meal I knew they would all like without complaint— chicken nuggets, roasted potatoes (looked just like French fries), roasted sweet potatoes (for me) and broccoli (everyone’s favorite). I decided...

Fred Flintstone at 5
We recently got our lamb and beef “shares” from our CSA/Shared Harvest. The other day I mentioned the lamb burger my middle son initially whined about. Today we had shoulder lamb chops. My husband had made a marinade last night for them— olive oil, rosemary (from a friend’s garden), garlic, salt and pepper. Simple, but oh such a wonderful combination of flavors that...

This isn't a hamburger!
Well, it happened again… my middle son ended up in tears when he found out was for dinner. After we’d spent most of the late afternoon scouting out the best tree from the tree farm and cutting it down, we were just up for a quick meal. We were having a hodgepodge of some leftovers—ratatouille and beef bourguignon that a caterer had made for a party I’d organized the night...

Same chicken, 2 nights 2 ways
One dish I absolutely love that my mother-in-law makes is her chicken stew. She makes it full of large pieces of chicken, potatoes, carrots and celery. And she makes dumplings too. I decided the other day I’d make a chicken stew but wasn’t in the mood to make the dumplings so I opted for egg noodles instead. I didn’t have my MIL’s recipe but she’d explained it a...

Mario the cake
So little time these days to spend time in front of the computer to actually get it all down. This past week was Thanksgiving and my youngest son’s 5th birthday. I co-chair a charity event for the library that Mark Twain started a hundred years ago which is happening this Friday. About 500 people are expected to come to the champagne gala and buy fabulous art by many local artists. Then...

If you have time, this is a great Thanksgiving...
I made this last week for our cooking club.
I remembered after making it why I don’t make it every year for Thanksgiving. It is amazing and quite impressive, but it takes time and quite a bit of work. If you have time, it’s worth it! Last year I made it because I wasn’t hosting Thanksgiving dinner so there wasn’t as much to do.
I’m hosting this year’s...

Pumpkin Cream Cheese Frosting
This time of year pumpkins and winter squash are in season and there are so many wonderful ways to use them. I made a few great dishes lately: butternut squash soups, ravioli, triple layer pumpkin pie, roasted squash.
One quick treat I make is pumpkin muffins with the Trader Joe’s Pumpkin Bread mix. They’re quick and easy to make and all the kids love them. I had an event to go to...

Trick or Treating a week late--slow cooker meal...
The past couple of weeks have been so crazy with the freak snowstorm that knocked out power to 100% of our town, kids home from school for a week, Halloween postponed twice in town (yes, they actually postponed town wide Trick or Treating first to the Saturday following then Monday, a week after the actual holiday), school celebrations postponed several times then canceled, and now just trying to...

Ahhh... power! I mean lights, heat, water &...
I did something stupid on Saturday— went out to the store with my youngest son when it started snowing because we were low on many food items and I didn’t want to get caught in without them. Unfortunately I had heard that the freak snowstorm wasn’t meant to hit us until that night, but hadn’t checked for a weather update myself before venturing out. Then I let my son get...

Homework blues. Salmon Cakes.
The past few weeks have been so busy that I’ve been feeling a bit overwhelmed. Most of it is my own damn fault for saying yes too often. But one area that’s stressing me out is the homework my 9 year old is expected to complete each night. The first few weeks of school not much was given but lately it’s like a plague, especially the writing. Writing: something I love to do...

At a loss for inspiration... then it hit me!
Last night I walked into the kitchen and stared at the chicken breasts I’d taken out of the fridge. I knew I was making chicken for dinner, but I hadn’t planned in what way/which recipe and now I found myself at a loss of what to do with them. I just stared at them. Hmm. What to do with them? I’d made curry the night before. I’ve done Moroccan, Asian, Italian and...

Ugghh... it's not always easy- even in my house.
So, many people think that my kids always eat well— without a fuss. But you know if you read my blog that that is not always the case. A few nights this week have been especially difficult with my middle son. Each time I put dinner on the table he whined and cried that he didn’t want to eat what we’ve made. And when I say he whines and cries… he whines and whines and...
mrscaptainamerica asked: I already asked a question tonight, but since reading more into your blog I have tons more! Just one for now though.(Absolutely loving it all by the way) I got married 4 years ago, eloped so no gifts lol, and we've been building our house and kitchen from scratch. I love to cook but find myself lacking so many things. What kitchen utensils/appliances do you think are the most essential to...
mrscaptainamerica asked: I would love to make the kinds of food for my daughter (and myself) that you make for your kids, but it's so expensive. I have to pick and choose what produce to buy to make my budget and that's even shopping tax-free on base. I can't even begin to think about organic usually. Do you really think it's realistic for the average parent to feed their family this way? If you...

Pastured Organic Steak for dinner
If you follow my tweets, you’ve seen that recently we were the recipient of a huge order of beef of Prescott Frost’s pasture fed, organic beef—flash-frozen and delivered from “farm to fork” from the Sand Hills of Nebraska. Last week while I was running out the door for cooking club my husband had just served the boys hamburgers of which I was lucky enough to get a...

Nut Free Snacks
So it’s back to school time for everyone around here. Our school year began with a delay created by the havoc Hurricane Irene wreaked. She left so many trees down across roads and power lines which in turn left 98% of our town without power —and running water (we have wells that are powered by electricity). The sound of generators running throughout the day and night got to me,...

Prescott Frost Organic, Grass-fed Beef →
We just got a huge shipment. Steaks, ground beef, burger patties and hot dogs. Can’t wait to try! We’ve heard such great things about this farm to fork company located in the Sandhills of Nebraska. It never uses any corn, no antibiotics or growth hormones. What to try first?
kristynamuch asked: Part 2: My question is, we are moving in 50 days and I would really like to get her (and the rest of the family) back on track as far as eating. What should I start her with. I am also curious what you do when your children just simple refuse to eat what you put in from of them (if that ever happens to you) do you make them something else? Do you force them to eat? Do they just not eat? I would...
kristynamuch asked: Hey there. I love your blog! I think it's really fantastic and it has some great recipes, tips and tricks. I have a (almost) 2 year old. She gives her nothing but canned pasta and happy meals and now whenever I offer her something she doesn't recognize (like vegetables) she throws a huge...

Chicken Spinach Ravioli with Cherry Tomato Sauce
I am working on my list of healthier nut-free snacks to contrast what the kids’ school nurse sent home. In the meantime thought I’d share this awesome ravioli my husband made on the boys’ first day of school at my suggestion. It’s funny sometimes: I buy all the ingredients and just have to tell him what I have in mind. Then he cooks it. He cuts faster, cooks and knows...

Preparing for the storm
We are in the direct line of Hurrican Irene.
I spent the past few days in Rhode Island with the boys boogie boarding and having a blast with friends on a much needed mini vacation. Now, it’s time to hunker down and get ready. Put toys and all our stuff away outside. Now going to get my shared harvest, more batteries, and some bread. I’ve got apples, pears, watermelon, roasted...

An indoor garden that's fun for kids
I attempt every year to have a vegetable garden, and every year I think I will be more successful. Unfortunately I find that I am not dedicated to it enough to reap heaps of produce but do get the occasional vegetable. ( I call myself the accidental gardener— if I harvest anything it’s by accident.) Herbs I can do; but I always start too late or don’t prune enough, or...

I have so much on my plate right now— launching new business to help families figure out ways to get their kids to eat well, dealing with my investment advisory clients in this turbulent market, being mom to 3 boys in the summer with no vacation to get away to due to austerity measures, sigining on to become President of our local Cooking Club and VP of Special Events. Sneaky Smoothies →
I have some friends whose kids absolutely refuse to eat green vegetables. This smoothie recipe I came up for those who realize that kids need to eat all their colored vegetables and fruits, not just carrots and apples. Because the blueberries leave dark little bits the spinach is disguised.
2 cups frozen blueberries
1 cup frozen strawberries
1 cup strawberry yogurt
tsp local honey
1 cup...

Marinated & Grilled Shrimp
I don’t have photos of this, but thought I’d pass on the recipe since the kids devoured them with such gusto.
Used about 1 pound of frozen shrimp. Thaw in cold water. In a bowl mix 3 Tbsp soy sauce, 1 tsp fish sauce, 1 tsp sesame oil, 1 tsp lemongrass, 2-3 cloves garlic chopped, 1-2 inch piece ginger grated/chopped, juice of 1 lime, 1 lemon, 1 orange, dash or two of cayenne or...

No battles tonight
We’ve been getting some beautiful vegetables from our CSA and other local farms. We had the local corn my youngest help shuck with cocozelle zucchini from our CSA, broccoli, brown rice and chicken. I made two types of chicken, a curry yogurt marinade (trying for something like Tandoori) and some with a crunchy coating. I mixed plain yogurt and Patak’s Hot curry paste in which I...

I wanna help!
My two youngest sons are the most enthusiastic of the three about helping in the kitchen. The other night while I was preparing dinner, my youngest came in and shouted, “I want to help!”. Now often if I try to help him help me, he often shouts, “I can do it!” (He’s a loud boy and really wants the independence of accomplishing it on his own.) Well, since I’d...
